A question if I may - if you could have only one, which would it be (and why) - the Big Pilot 5002 (slow beat) or the Pilot Chronograph Collectors’ Forum 3878-08 (CF3)?

Any help / advice would be greatly appreciated, thanks!

Always the 5002! It’s such an iconic piece in the history of IWC. The first Big Pilot after the WWII B-Uhr.

Couldn't agree more! The Big Pilot is a class of its own.
The CF3 is a beautiful watch too of course.
    The Big Pilot is outstanding.

Here is a quick look at the slowbeat in action. You can count the beats of the second hand in the one second exposure.  There are five.

I concur the 5002 is an iconic IWC that should be in a collection.
