Is it possible to send a watch for service directly to IWC Schaffhausen without going the local AD?

If Yes, how do you go about sending the watch? (My watch needs a new dial and a new pair of hands)

it is clearly your decision. I use the AD as the watch while in transit is covered by their insurance and they are experts at packing and shipping fine jewelry.

There is a contact IWC section on the IWC website where you can get additional information.

    Good luck,

One more reason to go via AD might be the customs, as AD will claim and clear it for you once it arrives from service.
I know it should not be a problem anyway, but it's one less thing to worry about.

And - it's a good excuse to go into shop and have a look at some new watches :-)
