Has the font changed over time for the text "Schaffhausen" on some of the models?

I was looking at a IW3714-46 at a shop in detail and I noticed that the Schaffhausen text on the face was in serif font while the image on the USA site shows it in a san serif font.

Then the image on the IWC site (Chinese) shows it in serif font.

Is that a detail that distinguishes production date of the watch?

I don't think it has ever changed. But I'm really not sure about that.
You can click on the image and then even zoom in with the "+" loupe to see the large image of the current version from the website.

Here is the one I owned from 2002 to 2006. Sorry for the bad quality. The only difference between the 2:
On my dial the numbers were embossed in the dial. Later until today the numbers are applied on the dial.
    Beautiful watch anyway...

That is a beautiful watch nonetheless.

Interesting. On the USA site, the 3714's are in san serif fonts.

I wonder if the san serif version exists.

Yes indeed you're correct. The watch shown there looks different in the font and in size of the text on the left too and in positioning of the text on the right. In the video which shows above this picture, the old style is used.
The English website is a newer software version, maybe the watch has really changed or it's just rendered differently because it's not a real picture but just a computer rendering from the 3D model.
    I wouldn't have even noticed.
