I am interested in the Big Pilot.
But I wonder why even the new version continues to use the 51111 movement whereas the new 52010 is available and said by IWC itself to be better.
Any idea ?

The 52010 has a small seconds hand at nine o'clock, and it sits in the Portuguese Automatic. The 51111 has a big central seconds hand, and it sits in the Big Pilot. This, according to the information in the collection section of this site.

I know that but I feel that the 52010 is there to replace the 51111 as an update. Am I wrong ?

Because of the difference of the seconds hand, such a new movement would have a different number, like maybe 52011. It may come, or not. Probably it will, but when is written in the stars. In the meantime there is nothing wrong with the current movement, so if you are in need of a Big Pilot I wouldn't wait unless it was announced with a new movement. But such an announcement doesn't come unless it is there to have.

Paul is right in his first response. The central second hand is essential for a non-calendar Big Pilot, in my view. I would rather have a slower beat 5000 based movement with a central second hand than a 52000 based movement with a seconds sub-dial. It's all about heritage. Apparently.
