I paid an absurd price that is border-line robbery, and I have a feeling that maybe the deal was TOO good to be true. Please help ease my mind and confirm this is legit. I'll attach some high quality shots of the watch. (The Movement at 6oclock is smooth as butter)

I took a look at your watch and it looks fine. Enjoy it, it is a true classic.
Due to the serial number and the pin buckle your watch must have been produced prior to 2012. Since 2012 Ref. 3714 is equipped with a folding clasp as standard and the serial numbers start with 5xx instead of 3xx. Thus the watch is at least four years old, maybe older. This surely factors in the price to some extend.

Not necessarily. Just keep an eye on how precise the watch holds time. IWC allows it to run 0-7 seconds fast per day and does not allow it to run slow (as far as I remeber correctly).
If your watch does not meet these numbers, your AD can try to adjust it and check if a service is due.
