I'm looking to buy a gold Doppel. Some of the ones advertised seem to have
extremely faded day and date wheels. If I bought such a watch, would it be
possible to get new wheels for it, and how much would they cost?

I guess best place to ask is an IWC dealer, he can contact IWC HQ to find out
if there are still spare parts.

I would be surprised if not.

I had a day dial changed from German to English for one of my ATs

not a problem for IWC-Shaffhausen, combined it with a SPA (!).

But TIP: ask for the changed dial to be returned to you

(always good to obtain the original parts).

    good luck

    cheers
